I have been smoking wings done wings the corn starch dusting with rub, smoke the deep fry, smoke then air fry and today did a modified 0-400 and I am converted. Z-grills so I started the grill on smoke setting then once smoke was rolling I cranked up to max and put the wings on with a hot honey dry rub. Flipped at 30 minutes. At 45 mins I tossed on some SPG chicken breast. The wings came off when the breast was done just over 60 minutes.
They were amazing and I won’t bother doing smoked then fried or air fried wings again. They were amazing

    Even if my pellet grill hot box is clean (I’ve had a Traeger and currently have a Yoder), there is a warmup period where will spew nasty thick white smoke that makes everything taste like it was marinaded in Malort. ESPECIALLY if you just set it to the max from the get-go and it rushes to get to temp.

    I’m assuming that’s what you did based on the title, but your description was written by ChatGPT running off a Pentium 3.

    Yep I like doing them this way. It’s just easier but I think the huge gains come in prepping the wings far enough ahead of time to get the proper moisture level in the skin, I use baking powder to help as well.

  15. I just started doing wings, and have done them at the regular ol 250, pulled slightly before done, sauce them again and transfer to a ripping hot grill to finish the cook and carmelize/crisp up the skin.
